Bo & Vine brings versatile event space to South Salem

Bo & Vine brings top-tier burgers and an upscale atmosphere to South Salem, opening a new location on Commercial Street, which offers a classy banquet space for events up to 90 people, providing the perfect place for your next gathering. It was born out of a desire to elevate Salem’s food scene. Owners Brian Kaufman and Matt and Mike Adams capitalized on the opportunity to offer local foodies high quality burgers in an upscale, modern environment. Kaufman enjoyed this level of restaurant while living in Arizona, but found few local equivalents when moving to Salem. Kaufman teamed up with Mike and Matt Adams, who had built their legacy in the food industry with Adam’s Rib Smokehouse, bringing Bo & Vine to life in 2017.

With Kaufman’s marketing background and the Adams’ food-industry expertise, the downtown location proved to be a major success. By 2020, the trio opened up two more locations, one in Corvallis and one in Eugene, each dishing out some of the best burgers in town. “We’re really trying to appeal to a demographic that wants a better burger, but in a quick-casual environment,” Kaufman said. “We’re going for more high-end, fresh ingredients and really creative combinations on the burgers.”

Bo & Vine boasts thick, fresh smash burgers, fries made in-house with hand-cut russet potatoes, more than a dozen creative sauce combinations, and shakes that are handmade with Tillamook ice cream. “If you want a good burger, then we’re at the top of your list,” Kaufman said. Now South Salem residents can enjoy these high-quality burgers in the comfort of their own neighborhood.

South Salem Bo & Vine features plenty of elbow room for guests. Kaufman explained the more than 5000 square feet building allowed them to design the space to accommodate longer lines, and even get creative with their first open-concept kitchen, inviting guests into a more immersive Bo & Vine experience.

The private banquet space offers two reservable rooms, one accommodating 60 guests and the other accommodating 30. The two rooms can be combined to host up to 90 people in one large space. Matt Adams expressed excitement about the space’s versatility, providing the perfect spot for both large groups and intimate gatherings. Unlike the other three locations, South Salem Bo & Vine offers ample free parking for both event and restaurant guests, giving it an added level of convenience.

South Salem continues to expand as more young families fill out new developments. Bo & Vine opens with excitement to serve this demographic in a new way. “It gives us the opportunity to have an entirely new clientele,” Matt Adams said.

Bo & Vine owners recognized a lack of versatile event spaces in South Salem, so the restaurant aims to capitalize on this gap in the market. Kaufman said they hope South Salem residents will latch onto the new location, taking full advantage of its convenience, closeness, and quality offerings.
