Rocky’s journey into the restaurant business began in an unexpected place. “I was a hibachi chef before becoming a restaurant owner. After my second daughter was born, my wife and I decided to start our own restaurant to have more flexible time for my family,” he shared. Rocky’s entry into the restaurant industry has a pioneering approach, as he started early. “I started chef school when I was 16,” he recalls. When the opportunity arose to bring a new culinary experience to Salem, he seized it. “I saw there was no ramen restaurant in Salem, so I’m the first one to open a ramen shop here.” His pioneering spirit has been instrumental in introducing authentic ramen to the local community.

Ibendoo Ramen’s concept is characterized by being healthy and homemade. This philosophy is evident in every dish, from the char siu to the 10-hour rich and opaque pork bone broth. The restaurant offers over 15 different customized toppings, including bamboo shoots, soft-boiled eggs, scallions, corn, mushrooms, nori, extra noodles, and tofu, ensuring a unique and personalized dining experience for every customer.

Another important matter is the team behind the magic. Rocky attributes much of the restaurant’s success to his dedicated team. “All the team members are trained by me. I work at the restaurant from opening to closing every day.” This hands-on approach ensures that every team member understands and embodies the restaurant’s values, contributing to the overall experience at Ibendoo Ramen.

Rocky and his team dedicate themselves to staying true amidst trends. While staying abreast of culinary trends is crucial, Rocky remains steadfast in his commitment to his roots. “Honestly, I am anxious about bad reviews of the taste of my ramen, but on the other hand, everyone has different tastes. My concept never changes; I just do my style, still making my own broth with high-quality pork bone and my own sauce.”

Talking about community engagement, Rocky’s connection to the Salem community is a cornerstone of his business. “I work in the restaurant every day. I talk with customers; this is my favorite part of the work. I can connect with my customers.”
